Fennel Sweets

Right, these are some instructions on how to make fennel seed sweets. The sweets are a tradition in India, where they are used to help indigestion.

  • Get your fresh fennel seeds from the garden, plus a bag of sugar.
  • In a small pan, mix a teaspoon of sugar with a tablespoon of fennel seed and a quarter of a teaspoon of water.
  • Heat gently until the sugar dissolves and begins to coat the fennel seed in a sugary shell.
  • Pour the mixture into a bowl, and add two more teaspoons of both sugar and fennel seed. Mix together.
  • Let the sweets cool, and then they are ready to eat :-) .

 

Lemon Balm Leaf Tea


Lemon Balm is good for colds, flu, coughs, bruises, wounds, crying, depression and whinging and has no dodgy side effects like some bought medicines may have. Here are some instructions to make lemon balm tea.

  • Pick a large handful of fresh lemon balm leaves from your garden. Be careful not to pick too many from just one stem, but picking a few from each will help your balm grow more.
  • Put the lemon balm leaves into a teapot or jug.
  • Pour boiling water into the pot.
  • Cover and leave for 15 minutes.
  • Strain and pour into cups.
  • (Optional: ) Put some honey onto a spoon and stir into the cup of lemon balm tea. Sprinkle with cocoa.

For different reasons, you could use mint. It would have a different flavour, but the preperation would be basically the same.

Coconut Rice Pudding


Here’s a recipe for a healthy and delicious rice pudding that we had for dinner last night (My Mum’s Recipe).

Ingredients:

1000ml coconut milk

1/3 c honey

2 tsp ground cinnamon or nutmeg

1 tsp vanilla extract

1 c pudding rice, uncooked

1 tbsp butter

Preparation:

1. Bring milk, honey, cinnamon, vanilla to the boil.

2. Add rice.

3. Simmer for 25 minutes, stirring frequently.

Try Adding… Maple Syrup, Golden Syrup or Sugar instead of Honey. Pop in a few raisins, sultanas, apricots.

Banana Smoothie


The Luroese (Lu – rose) Cafe is the best cafe in the Sourzier Region. It sells healthy and tasty dishes (as well as smoothies)!

Gluten Free, Wheat Free, Dairy Free, Soya Free, Sugar Free Smoothies.

Ingredients:

1 can full fat coconut milk

15-20 blueberries, blackberries, or raspberries

2 bananas, frozen and cut into 3

A drop of either vanila extract or almond extract

3 tablespoons sheeps yoghurt (optional for dairy free smoothie)

Preperation:

  • Simply blend all ingredients in a blender, until it resembles a smoothie.
  • Pour into cups, and add some toppings and extras.

Topping Ideas:

(Note: Not all topping ideas are gluten, wheat, dairy, soya, sugar free)

  • Cocoa powder
  • Chocolate or chocolate chips
  • Coconut cream
  • Whipped cream
  • Biscuits
  • A drizzle of lemon / lime
  • A sprinkle or sprinkles!
  • A shake of ground cinnamon
  • Chopped nuts
  • Honey
  • A sprinkle of sugar
